This is my take on the most traditional meal to eat on New Years Day. I subbed the ham/pork for turkey sausage to keep it a bit healthier, but it is equally comforting, delicious, and a satisfying way to bring on the new year.
Ceviche was something I was looking forward to eating in Ecuador.
