Here’s a little inspiration for a 15 minute “throw together” option. Just make sure you have a nice balance of the following: Protein, veg, healthy fat, carb and some spice. Salads or “power bowls” are all the rage and perfect excuse to combine and use up left overs.
Forget the fact that it’s well past Halloween, Thanksgiving, Christmas and even New Year’s. My love affair with pumpkin is here to stay. When cooler weather arrives there is nothing better than a big pot of chili. This is the perfect healthy (hello, Vitamin A) and hearty dish with a creamy thickness from the pumpkin that is oh-so-savory!
This is my take on the most traditional meal to eat on New Years Day. I subbed the ham/pork for turkey sausage to keep it a bit healthier, but it is equally comforting, delicious, and a satisfying way to bring on the new year.
Ceviche was something I was looking forward to eating in Ecuador. It’s often disputed that ceviche’s birthplace is either Peru or Ecuador so it’s hard not to find it, and order it, from any given menu. This Ecuadorian style shrimp ceviche took me back to the week I spent on the Galapagos Islands. It’s so easy and delicious!
The other night my friend called last minute to gather a group to grill. I’m 50-50 when it comes to handling last minute plans… I like to consider myself super spontaneous, but I really value prep time. Anyways, I offered to bring a summery side dish – thinking I could whip up a healthy potato salad […]
My friends (admittedly myself included) are about as indecisive as, well, I’m not quite sure… So when it came to Fourth of July plans we considered a road trip to Austin, camping in Oklahoma, a flight to LA, going to my parent’s lake house outside Kansas City, and then we settled on staying in Dallas. […]
You don’t need to track down hard to find ingredients to make great tacos. In fact, you probably shouldn’t. Tacos are a perfect way to use up leftovers and clean out the fridge. I start with a protein, then layer on the flavor with fresh produce, cheese or even jarred condiments. I love making tacos […]
This weekend is the official start of summer. Summertime makes me so happy… longer days, cocktails on porches, sandals, and backyard BBQs. In this case, a BYOA (bring your own app) barbecue. My sweet friend and her husband are hosting a party to show off their new place and grilling the meat, while the guests […]
I am in desperate need of a vacation. It was about this time my sophomore year in college one of my best friends from Kansas and I set off for a 5 week adventure in Italy… Part 2. My sister had exposed me to this beautiful country two years prior, and I was obsessed. Traveling […]
I get the biggest kick out of healthy food trends. One day a new “superfood” is announced and people become convinced it will save their life while its predecessor becomes the forgotten stepchild. Hello, Kale! See ya never, Spinach! It’s neat to hear people experimenting with new ingredients, but we all know deep down it’s […]
