Forget the fact that it’s well past Halloween, Thanksgiving, Christmas and even New Year’s. My love affair with pumpkin is here to stay. When cooler weather arrives there is nothing better than a big pot of chili. This is the perfect healthy (hello, Vitamin A) and hearty dish with a creamy thickness from the pumpkin that is oh-so-savory!
This is my take on the most traditional meal to eat on New Years Day. I subbed the ham/pork for turkey sausage to keep it a bit healthier, but it is equally comforting, delicious, and a satisfying way to bring on the new year.
It’s tradition in the Nelson household to start the carbs early on holiday mornings. For Thanksgiving it’s always pumpkin waffles. However, by the time Christmas rolls around, we are usually craving them all over again. In my mind, the perfect holiday breakfast includes all the delicious flavor of pumpkin pie in waffle form.
